Bicol Express is a famous dish in Filipino cuisine known for its rich, spicy, and creamy flavor. It has a fascinating history that intertwines with the culinary traditions of the Bicol region, known for its liberal use of chili peppers and coconut milk.

The original Bicol Express recipe adapted the traditional ingredients and cooking methods of the Bicol region to suit more food enthusiasts.  The combination created a rich, spicy, and creamy dish that quickly became popular.

The dish gained popularity in Manila and subsequently throughout the Philippines. Its rich, spicy, and savory flavor captured the hearts and taste buds of many Filipinos.

Cely Kalaw who owns a restaurant in Malate, Manila is credited for creating Bicol Express. Her inspiration for this dish began at the age of three when she visited Naga City in the Bicol region, where she experienced a variety of local dishes.

Growing up to become a skilled cook, Kalaw crafted a unique dish and named it Bicol Express, after the train that runs from Paco station to the Bicol region.

The dish is believed to be inspired by a traditional Bicolano dish called “Gulay na Lada,” which is known for its heavy use of chili peppers. While “Gulay na Lada” does not include meat, her creation features pork belly strips cooked with garlic, onions, ginger, coconut milk, shrimp paste, and an abundance of green finger chili.

Nowadays, it has become a beloved dish in many Filipino households, known for its bold flavors and spicy kick. It is a common meal in homes that enjoy the challenge of its hot and sizzling sensation.
